Heat vegetable oil in a large skillet over medium heat.

Add cubed Spam to the skillet and cook, stirring frequently until the cubes are golden brown, about 4 minutes.

Push the Spam to one side of the skillet and crack the eggs into the empty space. Scramble the eggs gently until fully cooked.

Add the frozen mixed vegetables to the skillet. Stir everything together and cook for another 3 minutes, until vegetables are tender.
