Delicious salmon patties that can be eaten with a side salad or on a bun as a sandwich.

Tips

If you're out of fresh herbs, use dried herbs as a substitute, using half the quantity.

For a spicier kick, add a pinch of cayenne pepper to the mixture.

In a large bowl, combine the drained salmon, breadcrumbs, mayonnaise, chopped onions, parsley, and beaten eggs.

Add lemon juice, salt, and black pepper to taste. Mix everything well until fully combined.

Form the mixture into 8 equal-sized patties.

1 can (14.75 ounces) canned salmon, drained

1 cup breadcrumbs

1/4 cup mayonnaise

1/4 cup finely chopped onions

1/4 cup chopped fresh parsley (optional)

2 eggs, beaten

1 tsp lemon juice

1/2 tsp salt

1/4 tsp black pepper

2 tbsp vegetable oil for frying
