This combination is a nutritional powerhouse—the vitamin C in the mango and papaya helps your body absorb the iron in the kale.

Dressing

You can always use a jarred dressing you have in the fridge instead of making one.

Put the kale in a large bowl with the dressing and massage it for 3 minutes. You want the kale to look dark green and feel soft. Fold in the mango and papaya at the very end so they don't turn into mush.

Instructions

6 cups kale (woody stems removed)

2 mangoes (peel & diced into chunks)

1 papaya (peel & diced into chunks)

Slaw

3 tbls oil(vegetable or olive)

2 tbls apple cider vinegar or lime juice

1 tbls honey or sugar

salt & pepper to season
